Berry Delightful Breakfast Idea

Lemon Chia Seed Parfaits

These bright and tangy parfaits start the day on a healthy note.

2 cups low-fat greek yogurt

1/4 cup honey

2 Tbsp lemon juice

2 tsp lemon zest

2 Tbsp chia or ground flaxseed

1 tsp vanilla extract

1cup fresh blueberries

1cup fresh raspberries

Combine the first 6 ingredients. Layer half of the yogurt mixture top with half the berries. Repeat layers. Serves 4. Note: I usually don’t make 4 and I usually have it in a bowl rather than a cup. You can also top with walnuts or a bit of granola.
