Whipped Cottage Cheese Parfait with Cinnamon and Peaches

If you think cottage cheese isn't for you, we dare you to try this simply luscious recipe! When whipped, cottage cheese becomes velvety, and the tangy flavor is perfect with sweet peaches, cinnamon, and crunchy almonds.

Cottage cheese is rich in casein protein, which digests slowly and helps preserve lean muscle mass, a key factor in healthy aging. It's also high in calcium and vitamin B12, nutrients essential for bone density and neurological function. The high-protein content of cottage cheese can stimulate GLP-1 (glucagon-like peptide-1), a hormone that enhances feelings of fullness and supports healthy blood sugar regulation.

Peaches, while naturally sweet, are low on the glycemic index and rich in polyphenols and vitamin C, which combat oxidative stress and support immune function. 1½ cups cottage cheese

2 tsp honey

¼ tsp vanilla extract

2 peaches, thinly sliced

¼ cup sliced almonds, toasted

½ tsp ground cinnamon

Directions:

In a food processor, puree the

cottage cheese until completely

smooth. Add the honey and vanilla

extract and pulse to combine.

Scrape the whipped cottage cheese

into serving bowls, jars, or glasses.

Top with the peaches and toasted

almonds. Sprinkle with the

cinnamon.

Enjoy immediately or store covered
